I agree with the inspection results but have since carried out the following improvements: The establishment has been thoroughly cleaned, and procedures are in place to ensure that cleanliness is maintained. In terms of the Management System - We do have a completed Safer Food Better Business pack in place for the business. Unfortunately, during the inspection the member of staff misunderstood what documentation was being requested and did not realise this was the information you were asking to see. We recognise that this resulted in the documentation not being made available at the time of your visit, and we apologise for the misunderstanding. We have since reminded staff where this documentation is kept and the importance of ensuring it is produced promptly during any future inspection. Both our Operations Manager and Operations Support Manager have since gone to site (immediately after the inspection) to retrain all staff on our Food Safety Management, Allergen Training, and Health & Safety within the Workspace). The conditions found at the time of the inspection were not typical of the normal conditions maintained at the establishment. We acknowledge the observation regarding the storage temperature of the toasties and rolls. These products were immediately moved into the storage refrigerator during your visit, and we have reminded staff of the importance of ensuring all high-risk foods are maintained at or below the required temperature. Given the exceptionally high temperatures during the recent heatwave, we have also introduced additional temperature monitoring of our display refrigeration to ensure products remain within legal limits. With regard to the designated wash hand basin in the rear kitchen, we would like to clarify that the basin is supplied with running water. We believe there may have been a misunderstanding during the inspection. The hand wash basin is operational, and we will continue to ensure it is clearly designated for hand washing only and not used for any other purpose. In relation to pest control, we have taken immediate action to deal with the ants and flies observed during the inspection and are reviewing additional preventative measures, including the installation of an electric fly killer in accordance with your recommendation. As mentioned previously, The Food Safety Management system was in place, however our member of staff didn’t produce it to the inspector – we use Safer Food Better Business for Caterers which has always been on site and gone through with the manager during training. We also have folders in place with all allergen information and procedures for cooking, etc. I shared all of our documentation directly with the inspector after receiving the Inspection Report.
